The Food Gatherer's Note: This delicious, seasonal thirst busting drink is easy to make and it also makes a great mixer when added to a splash of gin, on ice.
Rhubarb and lemonade refresher
Whole pieces of lemon zest from 1 lemon (use peeler & avoid pith)
A handful of mint sprigs
250ml Freshly squeezed lemon juice (approx. 8 lemons)
500ml sparkling water
In a saucepan, stir together the water, rhubarb chunks, sugar, lemon zest and the mint. Bring the mixture to the boil, stirring until the sugar is dissolved. Reduce heat, cover and simmer for 20 minutes.
Let the rhubarb mixture cool, then push it through a sieve over a wide necked jug or bowl, squeezing as much juice as possible. Discard the fruit in sieve.
Stir in the lemon juice and sparkling water. Pour into pretty bottles or a jug to serve and pour into glasses with ice cubes (and an optional shot of gin for the adults) and add sprigs of mint.
