The Food Gatherer's Note: This is ever so simple and great served with pork and ham, although I have to admit I demolished quite a lot of it on its own, straight from the mixing bowl!
APPLE AND MINT 'SLAW
2 eating apples
2 tblsp apple cider vinegar
4 tablespoons of extra virgin olive oil
A handful of mint leaves, picked from the stem
Slice the apples into fine matchsticks and mix in a bowl with the apple cider vinegar and extra virgin olive oil. Finely slice the leaves from ½ a bunch of fresh mint and add to the bowl with a pinch of sea salt and pepper. Leave the ingredients to mingle for at least half and hour before serving.
